Easy Peezie Noodle Lasagna

Finding something to cook after a long day at work that doesn't take a whole lot of thought process and doesn't break the bank is key for us right now or we will simply go hungry and won't eat again until the morning. So tonight it was to the drawing board, I wanted something with pasta but was over the typical spaghetti that is always my go to meal when I don't want to cook so experimenting I went. I remember briefly seeing a video for a quick wanna be lasagna a couple weeks ago so I took what I knew about lasagna and went with it. The biggest pain with the lasagna is the noodles and the layers and I just didn't have it in my tonight so I went with an idea and I think it turned out delicious!!!

Easy Peezie Noodle Lasagna


Ingredients for Easy Peezie Noodle Lasagna
  • 1lb ground beef or ground turkey (your choice) 
  • Medium chopped onion 
  • 2 cups Rotini Pasta
  • 1 cup Ricotta Cheese (You can also use cottage cheese here it is all about preference).
  • 1 Jar of your favorite pasta sauce
  • Mozzarella Cheese

Directions for Cooking Easy Peezie Noodle Lasagna
  1. Cook pasta according to directions on box until al dente.
  2. Combine hamburger and chopped onion into pan, cook until onion is soft and hamburger is brown. 
  3. Add 1 cup Ricotta Cheese to meat and onion mixture - stir well.
  4. Add jar of your favorite pasta sauce to meat mixture.
  5. Mix in cooked pasta
  6. Scoop mixture into a greased casserole dish - I used a glass 9in X 13in dish.
  7. Top with Mozzarella cheese.
  8. Bake at 425 degrees for about 15 minutes, or until cheese is bubbly. 
This is a quick and easy dish that is made even better with a nummy side salad and crunchy bread.
